Please be careful while flipping pancakes. Hot surfaces and syrup can be sticky situations!
In a large mixing bowl, whisk together 1 and 1/2 cups of all-purpose flour, 3 and 1/2 teaspoons of baking powder, 1 teaspoon of salt, and 1 tablespoon of sugar. Make sure all the dry ingredients are well combined.
Create a well in the center of the dry ingredients and pour in 1 and 1/4 cups of milk, 1 egg, and 3 tablespoons of melted butter. Gently whisk the wet ingredients into the dry ingredients until just combined. Don't overmix - a few lumps in the batter are totally fine!
Place a non-stick frying pan or griddle over medium heat. Give it a minute or two to heat up, and then lightly grease the surface with butter or cooking spray. Yum, sizzling goodness!
Pour 1/4 cup of batter onto the hot pan for each pancake. Cook until bubbles form on the surface, then flip the pancake and cook for another minute or until golden brown. Repeat this process until you've used up all the batter. Stack 'em up!
Transfer your fluffy pancakes to a serving plate. Add a dab of butter on top if you're feeling indulgent, then drizzle with your favorite syrup. Strawberries, blueberries, or a dollop of whipped cream would make excellent toppings too. Dig in and enjoy your lazy morning treat!
