As with any cooking adventure, there are a few things to keep in mind. Be careful when working with hot oil, as it can cause burns. Also, be sure to avoid touching the dough with wet hands, as it can make it sticky and hard to work with.
In a large bowl, combine 2 cups of glutinous rice flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Mix well until everything is evenly combined. Slowly add 3/4 cup of water, stirring continuously, until a smooth dough forms. Knead the dough with your hands until it becomes soft and pliable. Cover the bowl with a damp cloth and let the dough rest for 30 minutes.
After the dough has rested, take a small piece and roll it into a ball about the size of a ping pong ball. Make sure to keep your hands dry to prevent sticking. Repeat this process until all the dough is used up. Set the balls aside on a lightly floured surface, making sure they don't touch each other.
Now comes the fun part - filling the balls with sesame goodness! Take each ball and carefully make an indentation in the center with your thumb. Spoon a teaspoon of sweetened black sesame paste or your favorite vegan filling into the indentation. Gently pinch the edges of the dough together to seal the filling inside the ball. Repeat this process for all the balls.
In a large pot or deep fryer, heat enough vegetable oil to cover the balls. Once the oil reaches about 350°F (175°C), carefully drop in a few balls at a time, making sure not to overcrowd the pot. Fry the balls for about 5-7 minutes, or until they turn golden brown. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain any excess oil.
Once the sesame balls have cooled slightly, they're ready to be enjoyed! Serve them warm or at room temperature, and savor the chewy texture and sweet sesame flavor. These delightful little treats are perfect for sharing with friends or as a special indulgence just for yourself.
