Don't forget about the frosting: 1 cup powdered sugar, 2 tablespoons vegan butter, 1 tablespoon plant-based milk, and a dash of yellow food coloring.
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, combine the plant-based milk, sunflower oil, sugar, maple syrup, vanilla extract, and lemon juice. Mix well until all the ingredients are fully incorporated.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as it can result in dense cupcakes. Spoon the batter evenly into the prepared cupcake liners, filling each about two-thirds full. Smooth out the tops with a spoon for a nice even look.
Place the cupcake pan in the preheated oven and bake for approximately 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Once the cupcakes are completely cooled, frost them generously with the yellow frosting.
